I haven’t posted in awhile and really have been made about photographing my food the past week or so. I hope to get back into the groove this week. We are headed to CT, NYC, & MA this weekend so it should be a great adventure and lots of yummy food shots.

Do you have a favorite breakfast item? Mine is oats and I have them most every morning during the week. I usually top my oats with nut butter, mostly almond butter. My absolute favorite thing though is when there is about a tablespoon left in the jar and I fill it with my warm oats it’s so delicious.
I had a pretty good day foodwise yesterday- enjoyed oats for breakfast and made some hummus to go with veggies for lunch and a snack and ended the day with yummy pasta. I also made some granola bars for hubby’s lunches. I spent a half hour on the elliptical reading Thrive Fitness it was great!

Saturday I snacked on a small apple with peanut butter. Since I hadn’t worked out in a few days I finally got an elliptical sesh in and took that time to start reading Thrive Fitness. For dinner I was craving pizza so hubby went out and got the fixings and made a pizza topped with onions, mushrooms, garlic and mozza almond cheeze.
Sunday was spent pretty much being lazy while Neil worked ALL day 😦 So here’s what I ate (oh and I had a some of my Chocolate Maple Blueberry Flax Brownies):
The past few days have been crazy! I had an interview on Thursday and then due to the weather hubz and I decided to stay in Burlington for the night and to have a date night out. Since then I haven’t really sat down to do any blogging.
After my interview on Thursday I got a large soy chai latte at Speeder & Earls while I waited for it to be time for my massage. After my massage I was starving since I hadn’t eaten since breakfast so I stopped at Healthy Living and picked up a small salad and coconut water to hold me over until dinner later in the evening. For dinner hubby took me out to A Single Pebble this amazing traditional Chinese restaurant. One of the great things about this restaurant is that they have tons of vegan dishes and a number of dishes that can be made vegan (almost any meat dish can be made vegan). Also everything is served family style and comes out when the dishes is ready so there is no ordering appetizers and entrees just small and large plates.
This was an amazing dinner but of course we ordered way too much food and ended up eating it for lunch the next day. For breakfast Friday morning I had 2 cups of black coffee and an everything bagel with tofutti. Dinner last night was kind of just a mess of food that I had left over in the fridge:
This morning Neil and I decided to hit up Coffee Corner for some yummy breakfast. Breakfast was great however our car wouldn’t start after we got out, luckily we live in walking distance (I know, I know you’re thinking so why didn’t you just walk? we didn’t walk because it was -7F FREEZING!). We did get the car running and it’s doing fine now!
Today just seems to be one of those mornings when I feel like relaxing and getting some blogging done. I also felt like having another sandwich for breakfast this morning – I think it’s because we actually have bread in the house which is a rare occasion for us. So this morning I enjoyed a sandwich on whole wheat rye O Bread filled with sundried tomatoes, spinach, onions and 1 left over piece of tempeh from the reubens all of which had been sprinkled with nooch, salt and pepper and a tiny bit of montreal seasoning- all of this placed between two pieces of bread and grilled to perfection (400 calories). This breakfast is a little heavier than I should have had but lunch and dinner will be light.
